A flavorful kidney-friendly salad for hot summer days that pairs perfectly with Mjadera.
1 Cup of Cucumber, finely diced
1 Cup of Tomato, finely diced
1 Cup of Peppers, finely diced
1/4 Cup Onion, finely diced
1/4 Cup Radish, finely diced
1/4 Cup Fresh parsley or mint, chopped
Zesty lemon Dressing:
1/2 Lemon, squeezed
1 Tbsp. White or Apple cider vinegar
1 Tbsp. Extra virgin olive oil
1/2 Clove of garlic, minced, more to taste
Salt and pepper, to taste
1. Wash and cut all vegetables, mix in a bowl.
2. In a small bowl, whisk all dressing ingredients and add to vegetables.
3. Toss to combine.
