Meet Your New Star of Savory:
Creating savory, appetizing low sodium dishes is often a challenge. Salt and savory are like Bert and Ernie, Abbott and Costello, Simon and Garfunkel. When cutting back on salt it can seem like savory gets booted out the door too! But not anymore. Introducing smoked paprika. This beautiful little spice has infiltrated my cupboard the last year. It is the bacon of all spices. It pairs so well with savory dishes that I consider it an essential. (Salt, this means you should now take your stage left exit!). To me it doesn’t matter if you are cutting back sodium or not, smoked paprika belongs in every cupboard.Print
An omelette so fantastically savory you won’t miss the salt, cheese, or bacon. This is a true favorite.
- 4 eggs
- 1/2 cup red pepper, chopped
- 1/3 cup onion, chopped
- 1/4 cup low sodium ham, chopped (preferrably a honey ham)
- 1 tablespoon smoked paprika
- 1–2 tablespoons of olive oil
- Garlic powder
- Onion powder
- Chives (opt)
- Heat oil and skillet and saute onion.
- When onions are soft and translucent add in red pepper and saute until slightly roasted on edges. Add paprika and ham and cook until fragrant, 1-2 minutes.
- To prepare the omelette,in a bowl, using a fork whisk together the egg. Heat your skillet over medium-low heat. Once the pan is hot add 1 tablespoon of oil and swirl the pan to coat.
- Pour in the egg mixture and let it set for about 10 to 20 seconds. Use a heat-safe spatula to gently move the set eggs toward the middle of the pan, then tilt the pan so runny eggs take their place. Repeat this process until there is hardly any runny eggs to scoot around.
- Use your spatula to gently release the underside of the omelet from the pan. Tilt the pan a little forward and back to make sure it’s not stuck anywhere.
- Sprinkle with garlic and onion powder.
- Place smoky ham filling in one half of omelette and fold over.
- Let it set for a few seconds, then scoot it off the pan onto a plate.
- Garnish with chives and enjoyl
Most of the renal diet recipes on our site our written considering someone with Stage 5 kidney disease on dialysis. Here are some modifications for other stages of kidney disease to consider:
* If you are trying to be extra careful with phosphorus, you can switch out the 4 whole eggs for 6 egg whites which will cut the phosphorus down in this recipe by about 300 mg (yeah that’s a lot!).
* We use Private Selection Lower Sodium Honey Ham from Kroger’s deli. It has 370 mg/1oz serving. Most delis will have a lower sodium ham choice which can save you as much a 200 mg or more sodium/serving. We especially liked the honey ham because the very slight amount of sweetness paired magnificently with the smoked paprika. If you can’t find a honey ham add 1/2 tsp honey with the ham when cooking it in the skillet.
For stage 3 and 4 cutting back on protein is often a priority, but potassium often is not an issue. For this recipe, to cut back on protein, I would add extra mushrooms, cut the ham in half, add a hefty dose of tomatoes (if you like them) or any other vegetable. This will make your omelette much bigger and provide 3 instead of 2 servings.
