Mjadera Salad & Dressing – a taste of the big world in a bowl
A flavorful kidney-friendly salad for hot summer days!

1 cup cucumbers (finely cubed)
1 cup tomatoes (finely cubed)
1 cup of peppers (finely cubed)
1/4 cup onions (finely minced)
1/4 cup radish (finely cubed)
1/4 cup chopped parsley or fresh mint
Zesty lemon Dressing:
1/2 lemon squeezed
1 tablespoon vinegar (white or apple cider)
1 tablespoon extra virgin olive oil
1/2 small garlic minced (if you’d like)
Salt and pepper to taste
1. wash and cut all the veggies, mix in a bowl.
2. whisk all dressing ingredients and add to the veggies.
